Orange Pound Cake

Ingredients

1/2 pound (2 sticks) unsalted butter, at room temperature
2 1/2 cups granulated sugar, divided
4 extra-large eggs, at room temperature
1/3 cup grated orange zest (6 oranges)
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
3/4 cup freshly squeezed orange juice, divided
3/4 cup buttermilk, at room temperature
1 teaspoon pure vanilla extract

To glaze one loaf (optional):
1 cup confectioners' sugar, sifted
1 1/2 tablespoons freshly squeezed orange juice

Directions

Heat the oven to 350 degrees. Grease and flour two 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans. Line the bottoms with parchment paper. 

Cream the butter and 2 cups of the granulated sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, or until light and fluffy. With the mixer on medium speed, beat in the eggs, one at a time, and the orange zest. 

In a large bowl, sift together the flour, baking powder, baking soda, and salt. In another bowl, combine 1/4 cup of the orange juice, the buttermilk, and vanilla. Add the flour and buttermilk mixtures alternately to the batter, beginning and ending with the flour. Divide the batter evenly between the pans, smooth the tops, and bake for 45 minutes to 1 hour, until a cake tester comes out clean. 

While the cakes bake, cook the remaining 1/2 cup of granulated sugar with the remaining 1/2 cup orange juice in a small saucepan over low heat until the sugar dissolves. When the cakes are done, let them cool for 10 minutes. Take them out of the pans and place them on a baking rack set over a tray. Spoon the orange syrup over the cakes and allow the cakes to cool completely. 

To glaze, combine the confectioners' sugar and orange juice in a bowl, mixing with a wire whisk until smooth. Add a few more drops of juice, if necessary, to make it pour easily. Pour over the top of one cake and allow the glaze to dry. Wrap well, and store in the refrigerator.

Chermoula Chicken Drumsticks with Sweet Potatoes

Ingredients

1 bunch fresh cilantro, coarsely chopped, plus additional leaves to garnish
4 large cloves garlic, coarsely chopped
2 teaspoons coriander seeds, toasted and lightly crushed
2 teaspoons cumin seeds, toasted
1 teaspoon ground ginger
1/2 teaspoon red pepper flakes
1/2 teaspoon hot paprika
2 tablespoons red wine vinegar
1/2 cup extra-virgin olive oil
Zest and juice from 2 large lemons (about 1 tablespoon lemon zest)
Kosher salt
8 large chicken drumsticks
2 medium sweet potatoes

Directions

For the chermoula: In a food processor, combine the cilantro, garlic, coriander, cumin, ginger, pepper flakes, paprika and the vinegar with the olive oil. Add the lemon juice and zest and pulse until smooth. Season with a generous pinch of salt. Pulse to combine until smooth.

Toss the chicken drumsticks with a generous half of the chermoula, then cover with plastic and refrigerate to marinate for at least 12 hours and up to 24 hours.

Preheat the oven to 375 degrees F.

For the sweet potatoes: Place the sweet potatoes in the oven to bake until tender when pierced with the tip of a knife, about 1 hour.

After the sweet potatoes have been cooking for about 35 minutes, arrange the chicken on a baking sheet lined with parchment paper in a single layer with space between each piece, and sprinkle with salt. Place the baking sheet in the center of the oven and cook until the chicken registers 165 degrees F in the thickest part of the meat (avoiding bone), 20 to 25 minutes. Remove from the oven.

To serve: Slice the sweet potatoes into 1-inch rounds and arrange on the bottom of a serving platter. Arrange the chicken on top and top with the remaining chermoula and another sprinkle of salt and cilantro leaves.

Japanese Sweet Potato Crème Brûlée

Ingredients

2 Japanese sweet potatoes
1 tablespoon unsalted butter
1/2 cup kimchi, chopped well
4 teaspoons sugar, plus more for sprinkling
2 large egg yolks
2 teaspoons cornstarch
1 cup heavy cream

Directions 

Special equipment: a kitchen torch

Preheat the oven to 350 degrees F. Wrap the sweet potatoes in aluminum foil and place on a small sheet pan. Bake until softened, about 1 hour. Set aside to cool.

Meanwhile, heat the butter in a small nonstick pan over high heat. Add the kimchi and 1 teaspoon of the sugar. Cook until the kimchi caramelizes, 3 to 4 minutes. Remove from the heat and set aside.
Combine the egg yolks, cornstarch and remaining 3 teaspoons sugar in a small saucepan. Whisk until fully combined with no lumps. Add the cream and whisk again until fully combined. Cook over low heat, whisking constantly, until thick and velvety, 5 to 7 minutes. Remove from heat and pour through a fine-mesh sieve into a bowl to remove any lumps from the custard.

Place the sweet potatoes on a plate. Cut an oval shape off of the top of each one. Scoop out half of the flesh of each sweet potato. Press the removed flesh through a sieve and into the bowl with the custard. Whisk to combine.

To assemble, spoon half of the kimchi into each potato and fill the rest with custard (see Cook’s Note). Sprinkle the custard with sugar (you’ll probably use about 1 tablespoon sugar for each sweet potato to make a good crust). Hold a kitchen torch above each sweet potato and move the flame to caramelize the sugar. Enjoy!

Cook’s Note
If you have any leftover custard you can pour it into a ramekin, sprinkle it with sugar, caramelize it with a torch and enjoy!

Grilled Cheese and Broiled Tomato Soup

Ingredients

Soup:
10 ounces cherry tomatoes
2 tablespoons tomato paste
3 green onions, sliced
3 cloves garlic, minced
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1/2 cup heavy cream
1 tablespoon balsamic vinegar
1 sprig fresh rosemary
2 tablespoons pesto

Grilled Cheese:
4 slices Jewish rye and pumpernickel swirl bread
4 tablespoons pesto
8 slices American cheese
4 ounces Gruyère, grated
1/4 cup mayonnaise

Directions

For the soup: Preheat the oven to broil. Heat a large cast-iron skillet or griddle over medium heat.

Add the tomatoes, tomato paste, green onions and garlic to a small baking dish. Drizzle over the olive oil and sprinkle with salt and pepper. Toss to combine, then place under the broiler to lightly char the tomatoes and cook the tomato paste, about 6 minutes.

Shake the baking dish, then add the cream, balsamic and rosemary. Return to the broiler and cook until the cream has reduced and thickened slightly, an additional 6 to 7 minutes.

Add the tomato mixture to a heatproof blender and puree until smooth. Taste and adjust the seasoning. Divide between two bowls, swirling a tablespoon of pesto into each.

Meanwhile, build the grilled cheese sandwiches by laying out the bread. Spread a tablespoon of pesto on each slice of bread. For each sandwich, lay 2 pieces of American cheese, half the grated Gruyère, then 2 more slices of American cheese on one of the slices. Top with the remaining slices of bread. Spread 1 tablespoon of mayonnaise on the top of each. Place in the skillet, mayo side down. Spread the top of the sandwiches with another tablespoon of mayonnaise each. Toast, flipping as needed, until the cheese has melted on the inside and the outside is golden, 4 to 5 minutes a side. Serve with the soup.

When blending hot liquid, first let it cool for five minutes or so, then transfer it to a blender, filling only halfway. Put the lid on, leaving one corner open. Cover the lid with a kitchen towel to catch splatters, and pulse until smooth.
